    In the bowl (off the heat), combine the egg yolks and sugar. Using a whisk or an electric mixer, beat until light, foamy, and doubled in volume (about 2–3 minutes).
  3. Add the espresso
    Slowly pour in the hot espresso while continuing to whisk, ensuring the mixture stays smooth and creamy.
  4. Cook over the bain-marie
    Place the bowl over the simmering water and whisk constantly over low heat until the zabaglione thickens and the whisk leaves visible ribbons on the cream.
  5. Serve the coffee zabaglione
    Divide into small dessert cups, dust with cocoa powder, and serve immediately.
